Vegetable Salad

INGREDIENTS:

1 green eggplant
1/2 fresh tomato
5 g sundried tomato
1 white onion
1 gombo (okra)
80 g butternut
1 avocado purée
1 bnch red radish
1 cauliflower
1/2 bnch lettuce
1/3 bnch broccoli
1/2 beetroot
50 ml olive oil
salt and pepper

PROCEDURE:

1. Wash everything.
2. Cut the vegetables.
3. Blanch butternut, broccoli and cauliflower in salty water, and  cool them.
4. Drizzle oil and lemon on the green eggplants, roast them nicely.
5. Season it all with salt and pepper.
